Sandwich chutney

Sandwich chutney
Ingredients
- 1 cup washed coriander leaves 1 cup = 250ml
- ¼ cup grated coconut
- 1 green chilly
- 3-4 tbsps water (for blending)
- 1 tbsp sugar
- 2 tsp lemon juice (adjust to your preferred tanginess)
- Pinch salt
Instructions
- Combine all the ingredients in a blender. Blend until you achieve a smooth and well-combined paste.
- If needed, adjust the consistency by adding a little water. Be mindful not to make it too watery; aim for a spreadable but not runny texture.
- Transfer the chutney to a clean, airtight container and refrigerate. This chutney can be stored for a few days, and the flavours tend to enhance over time.
Serving suggestion
- For a taste of culinary bliss, spread a generous layer of the sandwich chutney on one side of your favourite bread. On the other side, generously spread creamy butter to create the perfect balance of freshness and richness. Press the two slices together to form a sandwich, allowing the vibrant flavours of the chutney to mingle with the creamy butter.
