What makes the ghee cake so special?

It starts with the key ingredient ghee, also known as clarified butter. This golden elixir infuses the cake with a distinct richness and flavour. With each bite, one can taste the buttery goodness that sets this cake apart from others.

Ghee (Clarified Butter): Ghee is the star ingredient, lending its rich, buttery flavour and aroma. To make clarified butter, simmer butter to remove water and milk solids, leaving behind pure butterfat. Ghee adds moisture and richness to the cake, resulting in a soft and tender crumb.

All-Purpose Flour: Flour serves as the base ingredient, providing structure and texture. All-purpose flour is commonly used for its versatility and moderate protein content, which helps create a tender cake texture.

Ghee cake is a moist and flavourful dessert made with clarified butter, sugar, eggs, flour, and milk. The egg-sugar mixture is gently heated via double boiling for a creamy texture. Baked to golden perfection, it offers a rich taste perfect for any occasion.

Ingredients

  • 2 room temperature eggs
  • 1 cup or 180 gms of Fine-grained sugar
  • 1 cup or 120 gms of all/purpose flour
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • tsp salt
  • ½ cup or 100 ml milk
  • ½ cup or 80 gms of ghee clarified butter

Instructions

  • Preheat your oven to 180°C. Grease and flour a loaf pan or line it with parchment paper for easy removal.
  • In a medium bowl, sift together the all-purpose flour, baking powder and salt. Set aside.
  • In a large mixing heat-proof bowl, combine the eggs and granulated sugar and mix with a whisk.
  • Fill a saucepan with water and bring it to a gentle simmer over medium heat. Place the heatproof bowl with the eggs and sugar mixture over the saucepan, making sure the bottom of the bowl doesn’t touch the water.
  • Whisk the eggs and sugar mixture continuously for about 2 minutes.
  • Remove the bowl from the saucepan add vanilla essence and mix until the sugar is dissolved.
  • Sift the dry ingredients and add them to the wet ingredients. Mix until just combined, being careful not to overmix.
  • Heat milk and ghee in a saucepan until the ghee is melted. Pour this over the batter and gently combine everything well.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the centre of the cake comes out clean.
  • Once baked, remove the cake from the oven, and transfer the cake to a wire rack to cool completely.
  • Once cooled, slice and serve your delicious ghee cake! Enjoy it with a cup of tea or coffee for a delightful treat.

Notes

Double boiling
The “double boiling” helps to gently heat and combine the eggs and sugar without cooking them too quickly or scrambling them. Continuous whisking is key during the double boiling process to ensure even heating and to prevent the eggs from cooking or curdling. It helps to create a smooth and creamy mixture, incorporating the sugar thoroughly and creating a stable base for the cake batter.
