Lady’s finger/okra, is known for its unique mucilaginous or slimy texture when cooked. The mucilage is a natural substance found in okra that gives it a slightly sticky or slimy feel. Some people enjoy this characteristic, while others may find it off-putting.

If you want to reduce the sliminess when cooking a lady’s finger/okra, here are a few tips: Make sure the lady’s finger is completely dry before cutting it. You can use a paper towel to pat them dry. Adding acidic ingredients like tomatoes, lemon juice, tamarind water or vinegar can help reduce the sliminess.

Ensure that your cutting board and knife are clean and dry when chopping the okra. A clean, dry surface will make it easier to control the sliminess of ladyfinger. Cleaning the knife with tissue paper between chopping ladyfinger (okra) is a good practice to help minimize the mucilage, which is the slimy substance released by the vegetable during cutting. After chopping a few ladyfingers or when you notice mucilage building up on the knife, take a moment to clean the knife. Fold a piece of tissue paper or use a paper towel to wipe off the blade. This helps remove the slimy residue and prevents it from transferring to the next piece.

This simple yet vibrant stir fry transforms lady’s finger into a savoury masterpiece. Infused with a blend of aromatic spices, this dish is a celebration of simplicity. It a perfect addition to your quick and wholesome recipes.
